This is a modified version of a mandarin orange cake my mom makes. It's actually just as good with the mandarin oranges, and all you have to do is omit the applesauce and use a small can (8 oz, I think) of mandarin oranges, drained, it its place.
Cake: 1/2 cup applesauce 1/2 cup brown sugar 3/4 cup flour 1 egg 1/2 tsp. cinnamon 1/2 tsp. baking soda
Combine all ingredients in a medium-sized mixing bowl with electric beaters, if possible.
Pour into greased 8" or 9" square pan (a round one will work if you don't have a square one.) Bake at 350º for about 25 minutes.
Topping: 1 generous Tbsp (make it a little rounded) Country Crock, or other low-calorie margarine substitute 2 Tbsp brown sugar 2 Tbsp skim milk
Put all ingredients into a shallow saucepan and heat to boiling on a medium heat.
When cake comes out of the oven, poke holes in it with a fork, chopstick, or other small utensil. Pour hot topping over hot cake and allow to saturate.
